{"id":18605,"date":"2023-05-05T12:18:33","date_gmt":"2023-05-05T16:18:33","guid":{"rendered":"https:\/\/mgdining.com\/gds\/?p=18605"},"modified":"2023-05-05T17:55:34","modified_gmt":"2023-05-05T21:55:34","slug":"filipino-pancit","status":"publish","type":"post","link":"https:\/\/mgdining.com\/gds\/2023\/05\/05\/filipino-pancit\/","title":{"rendered":"Filipino Pancit"},"content":{"rendered":"<p><em>Serves 12<\/em><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p>8 oz rice noodles<br \/>\n8 oz skinless, boneless chicken thighs 2 tbsp oil<br \/>\n2 c onion (julienned)<br \/>\n2 c matchstick carrots<br \/>\n1 c celery (thinly sliced on bias)<br \/>\n1 tbsp chopped garlic<br \/>\n3 c green cabbage (thinly sliced) 1 c chicken broth<br \/>\n3 tbsp soy sauce<br \/>\n1 tsp black pepper<br \/>\n2 lemons (cut into wedges)<\/p>\n<p><strong>INSTRUCTIONS<\/strong><\/p>\n<p>1. Soak rice noodles in warm water until tender, about 10 minutes. Drain &amp; discard water; set noodles aside.<br \/>\n2. In a large stock pot or kettle, cover raw chicken with chicken broth. Bring to boil; reduce heat, simmer chicken until tender enough to shred. When done, drain liquid; use mixer with paddle to shred chicken. Set aside.<br \/>\n3. Heat vegetable oil in a large saute\u0301 pan or wok. Add onion, carrot &amp; celery. Saute\u0301 5-6 minutes, until vegetables begin to soften &amp; brown.<br \/>\n4. Add garlic &amp; cabbage. Saute\u0301 6-8 minutes longer, taking care not to burn garlic.<br \/>\n5. Add reserved noodles &amp; chicken, chicken broth, soy sauce &amp; pepper. Bring to a boil; reduce heat &amp; simmer 5-6 minutes, until the mixture is hot &amp; vegetables are al dente. Add more chicken broth if mixture is too dry; add more soy sauce for additional flavor. 6.
