{"id":17444,"date":"2022-11-01T18:38:13","date_gmt":"2022-11-01T22:38:13","guid":{"rendered":"https:\/\/mgdining.com\/foxcroft\/?p=17444"},"modified":"2022-11-02T05:28:29","modified_gmt":"2022-11-02T09:28:29","slug":"slow-roasted-gochujang-chicken-potatoes","status":"publish","type":"post","link":"https:\/\/mgdining.com\/foxcroft\/2022\/11\/01\/slow-roasted-gochujang-chicken-potatoes\/","title":{"rendered":"Slow Roasted Gochujang Chicken &#038; Potatoes"},"content":{"rendered":"<p><em>Serves 6<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1\u20443 c gochujang sauce<br \/>\n6 T evoo divided<br \/>\n1 garlic bulb<br \/>\n1 T minced fresh ginger<br \/>\n6 bone-in skin-on chicken thigh<br \/>\n1 \u00bd lb \u00be\u201d dice yukon gold potato<br \/>\n2 T thinly sliced on bias green onion<br \/>\n1 fresh lime divided<br \/>\n1 T honey<br \/>\n1 \u00bd t kosher salt<br \/>\n1 \u00bd t black pepper<\/p>\n<p><strong>Procedure:<\/strong><\/p>\n<p>1. Preheat oven to 300\u02daF.<br \/>\n2. Whisk together gochujang &amp; \u00bc c evoo. Remove 3 cloves of garlic from bulb; peel &amp; mince. Mix it &amp; ginger into gochujang. Divide mix in half.<br \/>\n3. Cut remainder of garlic bulb in half. Dice potatoes to \u00be\u201d. Toss garlic halves &amp; potatoes with half the gochujang mixture &amp; remaining 2 T evoo; add to 12&#8243; cast iron skillet, scooting to outer edges. Pick out garlic halves &amp; put cut side down in center of skillet.<br \/>\n4. Coat chicken with remaining gochujang mix, put on top of garlic halves; season with s&amp;p. Roast at 300\u02daF until potatoes are tender &amp; chicken golden brown for 2 hrs. Remove chicken to plate to rest. Take a fork &amp; mash the potatoes slightly, then top with chicken again &amp; return to the oven for additional 30 mins until internal temp of 165\u02daF. Cut lime in half lengthwise. Cut 1 half into wedges &amp; set aside. Stir honey &amp; juice of remaining lime half into potatoes.<br \/>\n5. Top seasoned potatoes with chicken &amp; any accumulated juices.
