{"id":13310,"date":"2019-04-03T12:28:24","date_gmt":"2019-04-03T16:28:24","guid":{"rendered":"https:\/\/www.merig.com\/?p=13310"},"modified":"2019-10-09T15:41:06","modified_gmt":"2019-10-09T19:41:06","slug":"spring-pea-artichoke-feta-pasta","status":"publish","type":"post","link":"https:\/\/mgdining.com\/foxcroft\/2019\/04\/03\/spring-pea-artichoke-feta-pasta\/","title":{"rendered":"Spring Pea, Artichoke, &#038; Feta Pasta"},"content":{"rendered":"<p>Serves 6<\/p>\n<p>2 t salt<br \/>\n1 c fresh or frozen baby peas<br \/>\n4 c penne or cavatappi<br \/>\n3 T olive oil, divided<br \/>\n1 can (14 oz) artichoke hearts, quarted, drained<br \/>\n2 t fresh garlic, minced<br \/>\n1 c feta cheese, crumbled<br \/>\n2 T fresh parsley, minced<br \/>\n1 T lemon zest<br \/>\n2-3 T fresh lemon juice<br \/>\n\u2153 c grated parmesan cheese<\/p>\n<p><strong>Procedure<\/strong><\/p>\n<p>1. Bring 1 gal water to boil with salt. Blanch peas 1 minute, shock in ice water, drain well.<br \/>\n2. In same pot, cook pasta al dente. Drain, reserve 1 c pasta water. Return pasta to pot.<br \/>\n3. In large skillet, heat 1 T olive oil over med heat. Saut\u00e9 artichoke hearts 3-4 min, add garlic, cook 1 min.<br \/>\n4. Add to pasta, along with peas, feta, parsley, lemon zest &amp; juice, remaining olive oil &amp; pinch of salt. Toss to combine, add pasta water as needed to coat.
