{"id":11794,"date":"2018-06-01T14:43:17","date_gmt":"2018-06-01T18:43:17","guid":{"rendered":"http:\/\/www.merig.com\/?p=11794"},"modified":"2019-10-09T15:44:22","modified_gmt":"2019-10-09T19:44:22","slug":"radish-goat-cheese-farro-salad","status":"publish","type":"post","link":"https:\/\/mgdining.com\/foxcroft\/2018\/06\/01\/radish-goat-cheese-farro-salad\/","title":{"rendered":"Radish &#038; Goat Cheese Farro Salad"},"content":{"rendered":"<p>Serves 6-8<\/p>\n<p>6 c vegetable broth<br \/>\n2 c quick cook farro*<br \/>\n2 T salt<br \/>\n1 lb small radishes, 1\/2 lb cut into quarters, other 1\/2 lb sliced<br \/>\n3 T olive oil<br \/>\n2 T fresh garlic, minced<br \/>\npinch freshly ground black pepper<br \/>\n2 T fresh lemon juice<br \/>\n1 1\/2 t dijon mustard<br \/>\n2 c lightly packed baby arugula<br \/>\n1 c soft goat cheese, crumbled<\/p>\n<p><strong>Procedure<\/strong><\/p>\n<p>1. Bring broth to boil, add farro &amp; salt, return to boil, cover, reduce to simmer; cook until tender 30 min<br \/>\n2. Drain, transfer to large bowl, set aside<br \/>\n3. Heat saut\u00e9 pan over medium heat, add oil, quartered radishes, garlic, s&amp;p; saut\u00e9 until crisp<br \/>\n4. Remove from the heat, add lemon juice &amp; mustard, mix, pour over farro<br \/>\n5.
